TROPICAL COCKTAIL

Prep 20 mins | Cook 5 mins | Serves 8

Ingredients

  • 1/2 fresh pineapple
  • 1/2 cup caster sugar
  • 6 kaffir lime leaves
  • 4 thin slices ginger
  • 3 cups Coconut Water
  • 2 cups pineapple juice
  • 2 limes
  • 1/2 cup Malibu
  • 750ml soda water

Method

  1. Trim 1/2 fresh pineapple, cut into thin slices, then into small wedges. Place in a bowl and refrigerate until required.
  2. Place 1 cup water, 1/2 cup caster sugar, 4 kaffir lime leaves, and 4 thin slices ginger into a saucepan and stir over a medium heat until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes, then remove from heat. Stand for 20 minutes to allow flavours to infuse. Strain through a fine sieve and discard solids. Chill.
  3. Combine sugar syrup, 3 cups H2coco coconut water, 2 cups pineapple juice, juice of 2 limes, 1/2 cup Malibu, 2 kaffir lime leaves and pineapple wedges (reserving some for garnish) in a large bowl and stir until combined.
  4. Pour into tall jugs with 4 cups ice. Add 750ml soda water and stir until combined.
  5. Fill glasses with the cocktail, garnish with a pineapple wedge on the side and serve immediately.

CHRISMAS COCKTAIL

Ingredients

  • 1 orange
  • 1 lemon
  • 1/2 cup caster sugar
  • 1/2 fresh watermelon
  • 3 cups Watermelon Water
  • 1 cup cranberry juice
  • 1/2 cup Malibu
  • 1 bunch mint leaves
  • 750ml soda water

Method

  1. Place juice of 1 orange and lemon and 1/2 cup caster sugar in a large bowl and stir until well combined. Stand for 20 minutes or until sugar has dissolved.
  2. Trim 1/2 fresh watermelon, cut into thin wedges. Place in a bowl and refrigerate until required.
  3. Add 3 cups chilled H2melon watermelon water, 1 cup chilled cranberry juice, 1/2 cup Malibu and 1 bunch mint leaves to orange juice mixture, stirring until combined.
  4. Pour into tall jugs with 4 cups ice. Add 750ml chilled soda water and stir until combined.
  5. Stand melon wedges in short glasses and fill with cocktail. Serve immediately.
